      <image:caption>☺️I just love love these Moonblush Tomatoes! They are pretty much a permanent staple in my fridge!  Adapted from Nigella Lawson’s amazing recipe, the reason why they are called moonblush is because these tomatoes are cooked overnight, off the residue heat of a hot oven that’s been in use for at least an hour or two. Or you can simply cook them at 180 C for 30 mins. The Cherry Tomato is the miniature version of the big tomato, and so packs just as powerful of a punch of healthy nutrients. They not only boost immunity, but acts as an antioxidant. An excellent source of vitamins A and C, and a good source of Vitamin K and Potassium You can use on-the-vine cherry or baby tomatoes, cut in half and season with just 4 simple ingredients: a generous sprinkle of dried thyme, sea salt, pinch of brown sugar (helps to caramelise them a wee bit) and a good drizzle of olive oil. Then you just put in the hot oven, switch off the heat and leave to “cook” overnight. And by morning, it’s like magic, they are ready to devour! Hence, Moonblush tomatoes : ) I use them for everything, I mean everything. Sandwiches, omelettes, salads, pastas, stir-fries, sauces… you get the gist… These tomatoes can be stored in a glass container in the fridge for up to 1 week. Just do them in large batches as they just go with everything!</image:caption>
